I came up with a new recipe: beet risotto that I top with walnuts and goat cheese. Who would think beets would work with risotto but they do, just magic. I also made a borscht with the beets and cabbage. Fabulous.
This is something I never used fresh. They were tasty to eat but messy to cook. The red juice got everywhere while peeling and cooking them but they tasted great.
