Kimchi Inside-Out Grilled Cheese, What's a Kimcheese – Buffalo Market

Kimchi is perhaps what tomato is to Italian cuisine, for Korean food it can be a delicious side on its own or the base for a dish like Kimchi soup or pancakes.  It becomes the secret weapon in this alternate grilled cheese.  While you think of kimchi as perhaps spicy and full of umami; it is an amazing contrast to the classic ingredients in grilled cheese, bread, cheese, and butter.  

Kimchi comes in many varieties but is primarily made of veggies (often turnips, radish, and of course cabbage), ginger, garlic, and sometimes fish sauce.  

Grilled cheese is a slightly crispy sandwich filled with usually mild gooey cheese.

This alternate grilled cheese twist takes the crispy to a new level and the kimchi allows you to go even stronger in the cheddar cheese to play a balance with the spicy lighter plants that the kimchi adds. 

What is a kimcheese? It's a delicious classic grilled cheese with the powerful tasty goodness of Korean kimchi.  Inside-out grilled cheese means it has a crunch cheese shell.

Inked Organic's Great White is one of the best breads for making grilled cheese sandwiches.  You can find it at Whole Foods, Costco, and other big stores. 

Ingredients:

  • Unsalted butter
  • 4 slices Organic White Bread (We use Great White by Inked Organics)
  • Gochujang (Korean red pepper paste) or Sriracha (which is hotter)
  • 1 cup shredded sharp cheddar, or sliced
  • 1 cup kimchi, chop up into 1 to 2 inch pieces. being exact doesn't win. any medals here.
Step 1: Butter two slices of bread.  On the reverse side of the bread spread a little gochujang, top with 1/2 cup of kimchi.  Put 1/2 cup of cheese. Top with the other butter slice.  Sprinkle 1 table spoon or more cheddar cheese on top (if using slices, break a part, and don't go over board).  The cheese needs to stick to the buttered outside of the sandwich.
Step 2: In A medium non stick skillet, over low to medium heat, melt 1 tbsp of butter.  Cook a sandwich cheese side down. On the up facing side of the sandwich sprinkle some cheese.  You want to cook until crispy then flip quickly.  This takes 3 minutes.  
Step 3: You will need to clean the pan with a quick paper-towel wipe to cook the second sandwich.  Serve your Kimcheese and watch it disappear!
