While you think of kimchi as perhaps spicy and full of umami; it is an amazing contrast to the classic ingredients in grilled cheese, bread, cheese, and butter.
Kimchi comes in many varieties but is primarily made of veggies (often turnips, radish, and of course cabbage), ginger, garlic, and sometimes fish sauce.
Grilled cheese is a slightly crispy sandwich filled with usually mild gooey cheese.
