Kimchi Inside-Out Grilled Cheese, What's a Kimcheese

Kimchi is perhaps what tomato is to Italian cuisine, for Korean food it can be a delicious side on its own or the base for a dish like Kimchi soup or pancakes. It becomes the secret weapon in this alternate grilled cheese. While you think of kimchi as perhaps spicy and full of umami; it is an amazing contrast to the classic ingredients in grilled cheese, bread, cheese, and butter.
Kimchi comes in many varieties but is primarily made of veggies (often turnips, radish, and of course cabbage), ginger, garlic, and sometimes fish sauce.
Grilled cheese is a slightly crispy sandwich filled with usually mild gooey cheese.
This alternate grilled cheese twist takes the crispy to a new level and the kimchi allows you to go even stronger in the cheddar cheese to play a balance with the spicy lighter plants that the kimchi adds.

Ingredients:
- Unsalted butter
- 4 slices Organic White Bread (We use Great White by Inked Organics)
- Gochujang (Korean red pepper paste) or Sriracha (which is hotter)
- 1 cup shredded sharp cheddar, or sliced
- 1 cup kimchi, chop up into 1 to 2 inch pieces. being exact doesn't win. any medals here.
